2nd attempt at drinking green is being made. This time I manage to find frozen spinach whilst rummaging in the freezer - this should do the trick. I bung it in the blender, along with mango, pear and almond milk. The colour is exactly what I wanted! It is my most favourite hue of green. I make dad a mango smoothie afterwards, which is nowhere near as stunning in colour, but he seems to enjoy it all the same. Maybe I fixate too much on colour and not enough on taste.
Some people will consider the following photo to look a little ‘gross’ due to the unfair connotations the colour green has. I would encourage those people to grow up. HOW GORGEOUS 🐸🌱🪀

A couple of Benji’s uni mates have arrived to see him. Mum has made macaroni cheese for us all to have, except Dad, who is on a mum regulated diet and must instead have watery cauliflower soup. I forget how well Benji looks until other people stop by. Everyone is shocked at how well he’s doing for a chemo patient, as he’s not lost his hair, he’s lively, and he’s barely lost any weight (thank god). Everyone remarks on it. It must make him feel very it-girl, which he deserves as he is absolutely brilliant at dealing with all this. I will not gush, but he really is quite an exceptional person. The macaroni cheese is also exceptional - mum put bacon in it :)).

Chocolate cornflake cake time. I have attached a photo of the recipe, as I wholeheartedly believe these are the best cornflake cakes I have ever had. Mum always used to make these for our birthday parties when we were kids, resulting in two dozen children going apeshit, due to the amount of sugar in them. Ignore the annotation about the AGA (embarrassingly middle class revelation about the kitchen), but don’t ignore the adjustments in quantities, as you’ll get the syrupiest cakes ever if you follow them. They’ve got such an amazing effort:joy ratio, you put almost nothing in and still get the best result ever. The recipe is from Nigel Slater’s real food.

Here is a photo of the platter I’ll be putting the cakes on. On the back it says ‘hand made by Ibiscus Keramik, Rodos’. It is one of the most beautiful things we have in the house.

I am making pizza dough for the first time. I’ve not made pizzas since I was at a pizza express party as a child, so this is a very exciting time. Not sure if Benji is going to help me as his mates are still here. I also hate kneading so this shall be a challenge for my patience.

Still going on the pizzas - they’re turning out decent in a shocking turn of events. Me and mum only messed the first one up on entry into the oven - the edge that went in first folded in on itself, but after that we perfected a method of putting them in. As it’s me doing the dough and assembling, the work station is a little chaotic, but it seems to be working. I don’t think the kettle needs to be there.
