I'm Jakob (he/him) a chef living in Kent, working between Kent and London currently.
For my entries this week, I will be journaling both what I am eating- as well as what I am making at work- there is more often than not a large contrast between the meals I serve at work compared to what I eat. I usually tend to graze rather than eat meals at work- often there’s simply just not the time or opportunity to have a meal- so you get by on the morsels, trimmings and occasional big spoon of whatever dessert is on the menu that day to get you by.
This week I am working in the Plough in Homerton- I’ve recently been hired by their sister pub in Margate- but with a friend we are running the kitchen in London for a short period.
For my first entry, Monday 28th, it’s actually my day off, I’m at home with my girlfriend, Emma, she works long days at her studio in her house.
For breakfast/lunch, I made a croque monsieur , I’m not much into eating too early- so breakfast and lunch often to merge into one
It was made up of the ends of an assortment of cheeses I had to hand in the fridge, Comte, Welsh cheddar as well as a mystery cheese I couldn’t quite identify- possibly pecorino?
For dinner I put together some roast chicken, with some mash, lettuce and a mayonnaise made with some wild garlic Emma foraged last week
