i love salads. they are often the background, not the feature
and people don’t know how to dress them or make them interesting.
you do need a dressing, nothing too sweet or fancy
and, while it is risky, it’s best to really mix it all with the
dressing before serving rather than have a separate dish with
the dressing in which the oil, vinegar & everything else will
probably turn into a series of swampy layers…
always use garlic, of course
and remember, there is no shame in licking the remaining
sauce off of your plate, using your fingers, or drenching
your bread, your body is the utensil and the taste bud
